The difference has to do with the size of the fat molecules in the milk. In non-homogenised milk, the large fat molecules group together and rise to the top of the container. That’s why it’s sometimes called ‘cream on top’ milk. This is a totally natural separation of cream from the milk. In homogenised milk, the fat molecules are broken into smaller clusters that stay separate, so the cream won’t separate from the milk. The process of homogenisation is purely mechanical, so there is nothing added or taken away. It all comes down to what your personal preference is!
Absolutely nothing! Our milk is just that- milk. Simply Illawarra milk has no additives, including water, hormones, or antibiotics.
Our cows are free-range and grass-fed, and all milking and bottling is done on farm. That means we can guarantee that nothing has been added to our milk. We use sustainable practices to minimise environmental impacts and get the milk from our cows to you in less time than conventional dairy. Conventional milk is sourced from several different farm and trucked to processing facilities where it is mixed and stored in vats for days before being trucked to a bottling plant.
We take sustainability seriously and use methods that minimise impact on the environment. We use rotational grazing, to make sure paddocks aren’t overgrazed. Letting them rest ensures the pastures rejuvenate and grow back lush in future seasons. We also use solar panels to minimise grid pull. The fact that all milking, processing, and bottling is done on farm means we don’t use all that fuel that conventional dairy needs to truck milk between each step.

We’re blessed with naturally lush pastures for most of the year. We are fortunate to have natural water sources running through our farm and don’t need not deplete the groundwater.
If a cow is sick and needs antibiotics, she will be separated from the herd and cared for until she is back to health. In the rare case that we do need to give antibiotics to one of our cows, we do not include any of her milk. Simply Illawarra milk never contains antibiotics.
