MEET THE HAPPY HERD
Our herd is a mix of Swiss Brown, Jersey, and Holstein-Friesians. Each offers unique qualities of milk, and we blend them to get the best possible creaminess and volume.
SWISS BROWN
“I’m a big girl, with a lot of love (milk) to give.”
Milk type: Has smaller fat globules that make cream slower to rise. Ratio of protein to fat is great for cheesemaking.
Favourite pastime: Long strolls along the Macquarie Rivulet.
Most often complimented on: Strong hooves and legs
JERSEY
“My lashes are all natural, just like my milk.”
Milk type: High in fat, yellowish tint, very productive.
Favourite pastime: Chewing cud under the shade of the sheoaks, enjoying the ocean breeze.
Dislikes: Being greeted with ‘How now brown cow?’
HOLSTEIN FRIESIAN
“Despite my roots, I don’t believe in going Dutch.”
Milk type: Produces high volumes.
Favourite pastime: Eating grass while contemplating what’s on the other side of the escarpment.

AN IDYLLIC SETTING WITH A DELIGHTFUL TERROIR
A ter-what?! No, we don’t mean a scary dream that ruins a good night’s sleep.
We’re referring to the incomparable flavour and quality of our milk due to the unique environment our cows enjoy.
Our herd roams freely across 250 acres of pristine pasture. The cows graze at the base of the Macquarie Pass, in the Illawarra Escarpment, among rolling hills of lush grass dotted with native eucalypts like Tallow Wood and Spotted Gum trees.
The Macquarie Rivulet flows from the top of the escarpment and winds through the farm on its way to Lake Illawarra, providing an important natural water source for our herd and grasslands.
This combination of topography, soil, and microclimate creates a distinctive influence, or terroir, on the milk of our cows. Simply Illawarra is, quite literally, a taste of paradise.
